Discover Fillmore Pizza Kitchen

Walking into Fillmore Pizza Kitchen feels like stepping into a neighborhood hangout that knows exactly what it wants to be. Located at 3150 N Chestnut St, Colorado Springs, CO 80907, United States, this spot has built a loyal following by focusing on straightforward comfort food, friendly service, and a menu that doesn’t try to reinvent pizza but instead perfects it. I’ve stopped by more times than I can count, both for quick takeout nights and relaxed sit-down meals, and the experience stays consistent in the ways that matter.

One of the first things that stands out is how the kitchen operates. You can actually see the process behind the counter: dough stretched by hand, sauce ladled evenly, and toppings added with purpose instead of excess. During one visit, a staff member explained that the dough is made fresh daily, a method many independent pizzerias use to maintain texture and flavor. Food science research from institutions like Kansas State University shows that fresh dough fermentation improves crust structure and taste, and you can tell the difference here with every bite. The crust lands in that sweet spot between crisp and chewy, especially on their classic pepperoni pie.

The menu balances familiarity and variety. You’ll find staples like cheese and sausage alongside specialty pizzas loaded with roasted vegetables, seasoned chicken, and house blends of mozzarella and provolone. There’s also a solid lineup of calzones, wings, and salads, which makes it easy to satisfy mixed groups. I once ordered for a small office gathering, and the range of options meant everyone found something they liked, from meat lovers to vegetarian coworkers. Reviews around town often mention portion size, and that praise is earned; slices are generous without feeling sloppy.

What really reinforces trust is consistency across visits. According to the National Restaurant Association, consistency is one of the top three factors customers use to judge restaurant quality, even more than price. That rings true here. Whether it’s a busy Friday night or a quiet weekday afternoon, the pizza comes out hot, well-balanced, and on time. I’ve had conversations with regulars who say they drive across Colorado Springs because they know exactly what they’re getting.

The atmosphere leans casual and unpretentious. This isn’t a flashy dining room with trendy decor, and that works in its favor. Families, students, and longtime locals all seem comfortable here. On one visit, I overheard a father telling his kids this was their best pizza night of the week, and moments like that stick with you because they feel authentic. Another common phrase you’ll hear in reviews is always hits the spot, which sums up the vibe perfectly.

Location matters too. Being situated near major roads makes it an easy stop whether you’re heading home from work or picking up dinner after a game. Parking is straightforward, and takeout orders are handled efficiently, which is crucial for a place that sees steady foot traffic. Delivery times, based on my experience and local feedback, stay within reasonable windows, though peak hours can run a bit longer, something the staff is upfront about.

From an expertise standpoint, this kitchen reflects a deep understanding of what keeps a pizza joint thriving: quality ingredients, repeatable methods, and honest pricing. Food industry analysts often point out that independent pizzerias succeed by mastering basics rather than chasing trends, and this place is a case study in that approach. While they don’t claim to be artisanal or gourmet, they deliver dependable comfort food that earns its reputation through action, not marketing.

If there’s a limitation, it’s that seating can feel tight during rush hours, and specialty items may sell out late in the evening. Still, the transparency and communication from the team help set expectations, which builds confidence rather than frustration. For anyone browsing reviews or scanning menus online, this diner-style pizza spot stands as a reliable choice rooted in experience, care, and a genuine connection to the local community.

  • We eat there every time our friends come in town and stay at the hotel. We also go there on dates. Good food. Great pizza, soup, and salad bar. Friendly, prompt seating and service. You didn't usually think of going to a restaurant in a hotel if you're not staying there, but this is a frequent option. Fairly quiet, so it's a good place for conversation or a business meeting.

  • I traveled extensively in another life and retired to COS. This is a pleasant hotel. The Pizza Kitchen is in the lobby/bar. Pizza fresh and has good flavor, sauce was great. Crust thin, a little too thin for my liking. Would visit again. The offer an all you can eat buffet some nights. Very friendly staff.

  • Found out about Fillmore Pizza Kitchen through our realtor who mailed us a "buy one get one free" pizza voucher. I always Google research an establishment before visiting to get some type of idea of what to expect. And to be honest, knowing that this restaurant was inside a hotel, I had already lowered my expectations. After pulling up and seeing the entrance from the parking lot, I was impressed by the noticeably large sign out front. Once we entered, the hotel staff greeted us with smiles and were very nice. We mentioned that we were here to have lunch and not looking for a room. They were fine with that and stated that we could seat ourselves anywhere we liked. My wife wanted to sit at the bar and found a couple of chairs and immediately our bartender Eric greeted us and we showed him our pizza voucher. We could tell that he had seen a million of these vouchers and explained to us what exactly was free under the voucher. My wife ordered the artichoke dip and a 10 inch veggie pizza and I ordered a 10 inch pepperoni. My wife wanted a glass of wine and the bartender explained that the owners wife is a wine connoisseur and handpicked all the wines. Eric gave my wife a couple sample tastes and she picked one of the red wines which tasted good with the homemade artichoke dip and fresh veggies. The pizzas came out shortly afterwards and they looked great. The crust had the perfect taste and texture. Crunchy and soft at the same time. Delicious! We ordered a couple of desserts as well and they too were outstanding. We learned from Eric that the lasagna, meatballs, sauces, dips, salad dressings and some of the desserts are all made from scratch right there inside the kitchen. We will be back again for more pizza and I'm trying the lasagna next time!

  • Salad bar is top tier! Since Covid our town has gotten rid of all salad bars, so this was a nice surprise for us. Pizza had 4-5 selections, was 9/10, the garlic knots were hard as rocks. $16.99 for ultimate pizza and salad bar. Clean restaurant, conveniently located in the hotel, nice wait staff. Great option after a long day in the mountains.

  • A couple co-workers and myself decided to try this place on the way home from work. All three of us were very happy that we did. When you walk through the doors you notice it's very clean and the seating is spaced very well. There was only one cocktail waitress and the bartender working upfront. But those two made it seem as if there were 10 people working. The cocktail waitress took our order would be done within 15 minutes. It was in fact done in that time frame. I ordered the California dream Pizza and had them hold the feta cheese but add ham. By far the best pizza I have had in a long time. I will be going back!!

  • First time there. Place was very clean. The staff was attentive. The pizza bar was stocked regularly with a nice variety of good pizza. Salad bar fresh and well stocked. Two soups and they were great. Very odd spot light type bulbs shining down, almost needed sunglass. Odd to park on smashed gravel or smashed asphalt. Met a lot of neat and friendly people. Highly recommend and will go back!
